US and Imperial gallons are different

A US liquid gallon is exactly 3.785411784 litres. An Imperial gallon is exactly 4.54609 litres, so an unlabelled “gallon” can create a substantial error.

US and Imperial fluid ounces and pints also differ. This converter keeps the system name in every label and result.

Volume is not weight

Millilitres and cups measure space occupied; grams and ounces by weight measure mass. Water is close to one gram per millilitre under ordinary kitchen conditions, but other ingredients need their own density.
