Why recipes use cups in the first place
A recipe can ask for a cup of flour, a tablespoon of sugar or a teaspoon of salt without requiring a scale. That simplicity is one reason volume became so deeply embedded in American cooking.
But there is a trade-off. A cup measures volume; a gram measures mass. One tells you how much space an ingredient occupies. The other tells you how much it weighs.
The story of why American recipes settled on cups is really a story about making cooking instructions reproducible.
Before recipes were standardized
Older recipes often relied on quantities that made sense only to the person writing them. Cooking was learned largely through practice, household tradition and judgment.
As cooking schools and published cookbooks became more influential in the late 19th century, that began to change. Scientific cookery placed greater emphasis on measurements and repeatable results.
The measuring cup was useful because it gave cooks a practical reference that did not require a weighing scale.
You could fill it, level it and continue cooking.
Fannie Farmer and the standardized recipe
One of the important figures in this transition was Fannie Farmer, principal of the Boston Cooking School.
Her Boston Cooking-School Cook Book, first published in 1896, included a section called “How to Measure.” Farmer wrote that correct measurements were necessary for the best results and recommended measuring cups, tablespoons and teaspoons of regulation sizes.
Her instructions were specific. A cup of a dry ingredient was to be filled and then leveled with a knife. Flour and similar ingredients were to be prepared before measuring. Tablespoons and teaspoons were also to be measured level.
For liquids, she gave a simpler rule: a cupful was what the cup could hold.
Farmer did not invent the measuring cup. Different versions of cooking measures were already in use. Her importance was in helping establish a disciplined, reproducible approach to measurement in American recipe writing.
Why cups were so practical
A weighing scale adds another step to cooking. A cup does not.
For a home cook, volume measurements were convenient because the measuring equipment was inexpensive, reusable and easy to understand. A recipe could be written for an ordinary kitchen rather than a laboratory.
That mattered as cookbooks became widely distributed. A recipe had to make sense in kitchens the author had never seen.
The measuring cup became a common language for describing quantities.
It also worked well for liquids. If a recipe calls for a cup of milk, the volume is straightforward to reproduce.
Dry ingredients are where things become more complicated.
A cup of flour isn't always the same amount of flour
Put 120 grams of flour into a container and you have 120 grams every time.
Put flour into a cup and the result depends partly on how you fill it.
Flour is compressible. The amount that fits into a cup can change depending on whether it has been sifted, spooned in, scooped directly from a container or packed down.
This is why modern baking often favors weight measurements.
The problem is not that the cup is an inaccurate measuring device. It is that volume does not tell you mass.
A cup of water and a cup of flour occupy the same volume but have very different weights because the ingredients have different densities.
Even Farmer's instructions recognized that dry ingredients needed to be handled consistently. Her method called for ingredients such as flour to be prepared before measuring and for the filled cup to be leveled rather than packed arbitrarily.
So are grams better?
For many baking applications, grams have a major advantage: they are based on mass.
If a recipe says 250 grams of flour, the quantity does not depend on whether you scoop it or spoon it. Your scale simply needs to reach 250 grams.
That makes recipes easier to reproduce, particularly when several dry ingredients are involved.
But that does not make cups useless.
A cup is still convenient for liquids and for everyday cooking where small differences in quantity are not critical. Cups are also deeply established in American recipe writing, so replacing them entirely would create its own inconvenience.
The two systems are measuring different things.
Why a cup can't simply be converted into one number of grams
There is no universal answer to the question: How many grams are in a cup?
There is only an answer for a particular ingredient.
A cup of flour has one mass. A cup of sugar has another. A cup of butter has another.
Even within one ingredient, preparation can affect the result.
So converting cups to grams requires knowing what is actually inside the cup. It is not a simple unit conversion in the same way that converting metres to feet is.
That is why ingredient-specific cooking conversions are useful.
Why cups are still everywhere
More than a century after Farmer's cookbook, American recipes still commonly use cups, tablespoons and teaspoons.
Part of that is tradition. Part is convenience. And part is that the system works well enough for many kinds of home cooking.
Modern cookbooks and baking sites increasingly provide both volume and weight measurements, giving cooks the convenience of cups while allowing more precise measurement with a scale.
The two approaches can coexist.
A cup is useful because it is familiar. A gram is useful because it is consistent.
The problem starts when recipes cross borders
An American recipe can be perfectly clear to an American cook and surprisingly inconvenient elsewhere.
A cook using a kitchen scale may see “1½ cups flour” and immediately ask: How many grams is that?
There is no single answer without knowing the ingredient and the measurement convention being used.
This is one reason recipe conversions are more complicated than they first appear. The conversion is not simply between two units. It is between volume, mass and a particular ingredient.
So when a recipe gives you cups and your kitchen works in grams, do not treat the conversion like a basic length or temperature conversion.
You need to know what you are measuring.
Cups weren't designed to be perfect
They were designed to be practical.
That distinction explains why cups survived.
The measuring cup gave generations of home cooks a simple way to follow written recipes without owning a precision scale. Standardized instructions made those recipes easier to reproduce, while the familiarity of the system kept it useful long after more precise methods became available.
The gram solved a different problem. It gave cooks a measurement of mass that does not depend on the shape, density or packing of the ingredient.
Neither system is inherently wrong. They simply answer different questions.
A cup tells you how much space something occupies. A gram tells you how much it weighs.
And when a recipe crosses between those two systems, the ingredient in the cup matters.
