A practical dry-yeast converter based on the common 7 gram packet and 2 1/4 teaspoon equivalence.

The packet convention

Red Star states that one 0.25 ounce or 7 gram packet contains approximately 2 1/4 teaspoons of yeast.

Red Star also permits a 1:1 substitution between its active dry and instant yeast by quantity, while noting that rise time can differ.
