A useful starting ratio

This calculator reverses the common baking guideline that 3/4 cup oil can replace 1 cup butter. Therefore butter volume equals oil volume divided by 0.75.

Butter contains water and milk solids, so it cannot behave exactly like oil. Creaming, spread, tenderness, browning, and flavour may change.
