The calculator estimates fat, milk solids-not-fat, added sugar, and total solids from four core ingredients. The guide bands are formulation targets rather than pass/fail rules.

Fruit, chocolate, alcohol, alternative sugars, egg yolks, stabilisers, and flavour solids change freezing behaviour and must be included in a more advanced formulation.

Overrun changes yield

Overrun is the air incorporated during freezing. It affects apparent volume and scoop yield but does not change the ingredient mass.

The yield estimate uses a 1.05 g/mL liquid-mix density assumption and the entered overrun, so it should be checked against the actual machine and scoop.

Frequently Asked Questions

Does an in-target mix guarantee perfect ice cream?

No. Freezing curve, sugars, stabilisers, emulsifiers, ageing, machine performance, serving temperature, and flavour ingredients also matter.

What is MSNF?

Milk solids-not-fat are milk proteins, lactose, and minerals remaining after milk fat and water are excluded.
