What the Calculator Measures
Milk fat is contributed by the whole milk and heavy cream.
Milk solids-not-fat, commonly abbreviated MSNF, include milk proteins, lactose, and minerals remaining after milk fat and water are excluded.
Added sugar is the entered granulated sucrose. It does not include lactose naturally present in dairy ingredients.
Total solids are calculated as milk fat plus MSNF plus added sugar. Water is the remainder of the simplified mix.

Milk Fat in Ice Cream
Milk fat contributes richness, flavour delivery, smoothness, body, and lubrication. Higher fat does not automatically produce better ice cream because it must remain balanced with the other solids and the intended serving temperature.
The calculator counts 3.5% of whole-milk weight and 36% of heavy-cream weight as milk fat.
The current U.S. standard of identity generally requires ice cream to contain at least 10% milkfat, with adjustments applying to some bulky flavouring ingredients. This calculator does not determine legal compliance.
What Is MSNF?
Milk solids-not-fat contain the lactose, casein, whey proteins, and minerals supplied by dairy ingredients.
MSNF contributes body, improves water binding, and supplies proteins that support structure and air-cell stability.
Too little can leave a mix weak or watery. Excessive MSNF can raise lactose concentration and increase the risk of sandy texture from lactose crystallisation.
Skim milk powder is commonly used to raise MSNF without adding substantial milk fat.
Sugar and Freezing Behaviour
Sucrose adds sweetness and total solids, but it also lowers the freezing point of the water in the mix.
A sugar percentage inside the displayed guide does not fully describe freezing behaviour. Dextrose, glucose syrup, invert sugar, honey, lactose, fruit sugars, and alcohol affect sweetness and freezing differently.
This simplified calculator supports granulated sucrose only and therefore does not calculate relative sweetness or freezing-point depression.
Understanding Total Solids
Total solids are the non-water portion of the mix. In this calculator, they consist of milk fat, MSNF, and added granulated sugar.
Higher total solids can increase body and reduce the amount of free water, but an excessively concentrated mix can become heavy, gummy, overly sweet, or difficult to freeze.
Commercial formulas may also count stabilisers, emulsifiers, cocoa, egg yolk, fruit solids, glucose solids, and other ingredients that this tool does not support.
Guide Bands Are Not a Recipe Score
A recipe does not become successful merely because every displayed percentage falls inside a guide band.
Texture also depends on sugar type, freezing point, stabilisation, emulsification, homogenisation, pasteurisation, ageing, draw temperature, machine performance, overrun, storage temperature, and serving temperature.
Use the calculator to understand a simple base, then test the recipe and change one variable at a time.
